Carrot Halwa
Here's a recipe for carrot halwa from Vivek. It's basically a
dessert dish, and while it does take a little while to cook, you don't
have to pay much attention to it, and it's very simple. This is also a
good winter-time dish.
Ingredients
- 2 carrots, washed & grated
- 1 cup whole milk
- 1/2 cup sugar
- 1/4 cup clarified butter
- 4-6 cardamom seeds, peeled & crushed
- 10-12 (unsalted) cashews, split or crushed
Preparation
In heavy pan, bring milk to boil over medium flame.
Add grated carrots. Cook, stirring often, for 30-40
minutes until mixture thickens.
Lower flame, add sugar and clarified butter. Stir
well (by this time, mixture should be fairly dry)
until mixture pulls away from sides of pan. Sprinkle
cardamom powder and cashews.
Serve warm or cold.
